Favourite meals & snacks.

What are your favs you cook whilst away, whether cooking inside ie oven or outside bbq or hob stylie...

One of mine is a sqid, mushroom & courgette risotto, can be cooked inside or out all you need is 2 gas burners & lots of love 

slow roasted bellypork with crisp.

Feeds 2

 

Ingredients:

Olive oil

10 small plum tomatoes, halved

150 g of smoked salmon, cut into ribbons

50 g (fistful) of walnuts, broken

2/3 cloves of garlic

150 g of linguine (or other pasta)

 

Gourmet additions (optional, but definitely worth it if you can):

Generous handful of torn basil

Grated parmesan or cheddar cheese.

 

Method:

Bring a saucepan of (salted, if you wish) water to boil and add the pasta.

In a frying pan, splash a good glug of olive oil and grind in black pepper, add the chopped or crushed garlic and the walnuts, then add the halved tomatoes and the ribonned salmon and fry while the pasta cooks.

Drain the pasta and serve. Stir the basil into the salmon mix, then serve onto the bed of pasta.

Sprinkle with cheese.

 

Delicious and quick.
